Quebec Is Moving to Protect Poutine’s Origin

This week a fascinating story came out of Quebec that caught the attention of anyone who cares about the history of poutine.

Journaliste Pascale Lévesque reported in Le Soleil that Quebec’s dairy industry is working toward giving poutine cheese curds a protected designation of origin. The effort is being led by the Quebec Dairy Industry Council and supported by several major cheesemakers across the province.

The idea is simple. As poutine grows in popularity around the world, Quebec wants to protect the authenticity of the ingredient that makes the dish what it is: fresh cheese curds. Not just any cheese…..the squeaky, fresh curds that define real poutine.

Several producers including Boivin, Bergeron, Chaudière, Saint-Guillaume, Victoria, Saputo, and Fromagerie des Basques have worked together to create shared production standards that will now be reviewed by Quebec regulators.

Why does this matter?

Because poutine didn’t just appear out of nowhere. It came from Quebec’s dairy farms, cheesemakers, and roadside casse-croûtes. Protecting the origin of the curds helps protect the history of the dish itself.
